Morning Raisin Scones
ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
½ cup sugar
5 tablespoons salted butter, cold
½ cup raisins
1 large egg yolk ½ cup yogourt + ½ cup milk, cold
1 ½ teaspoons vanilla powder
egg white and granulated sugar for brushing
directions:
1- Sift together the flour, baking powder, and sugar in a large bowl. Add raisins. Cut the butter into small cubes and rub into the flour between two hands until crumbly.
2- In a separate bowl, whisk the egg yolk and vanilla powder with the milk and yogurt.
3- Add the egg mixture into the flour mixture slowly and stir until the mixture forms dough.
4- Turn dough onto a lightly floured surface and knead for one minute, being careful to not overhandle. Divide the dough in half to facilitate rolling.
5- Preheat oven to 390 F
6- Roll dough until approximately ¾ inch thick. Cut into 2 ½ inch diameter cookie cutter.
Place onto floured baking sheet. Brush tops with milk and sprinkle with sugar.
7- Bake for 15-20 minutes or until lightly golden. Serve immediately with heavy cream and jam.
