Peanut-Barbecue Chicken
This dish can be made quickly on a weekday evening and yet still feel like you’re indulging yourself. It’s similar to chicken wings with a honey barbecue sauce, but the peanut butter adds a smoother type of sweetness to the sauce.
ingredients:
Chicken Marinade:
6 drumsticks, skin-on
½ cup orange juice
½ lemon
3 cloves garlic, coarsely chopped
2 tablespoons olive oil
salt and pepper
Peanut-Chilli BBQ Sauce:
1 tablespoon canola oil
2 tablespoons freshly grated ginger
¾ cup barbecue sauce
1 cup water
3 tablespoons soy sauce
2 tablespoons smooth peanut butter
1 teaspoon chilli flakes
salt and pepper to taste
directions:
1- Clean chicken with soap and water and marinade for at least an hour in all ingredients of marinade.
2- Combine ingredients of the sauce in a bowl, mixing well to incorporate peanut butter into the liquid. Set aside.
3- Remove drumsticks from marinade and line up flat in a non-stick pan. Pour on ¾ of the sauce, leaving the rest aside for basting at 10 minute intervals.
4- Bake in 360° oven, covered with aluminum foil, for 30 minutes or until cooked. For the remaining 10 minutes, bake uncovered. Baste every 10-15 minutes using remaining sauce, until finished.
source: This was based on a peanut-barbecue sauce dip from Bobby Flay’s Mesa Grill cookbook. I find it sweeter and stickier when it’s baked with chicken.
