Spinach Salad

I prefer the smooth, thick leaves of spinach to lettuce leaves any day. Dressed up in this sweet, simple vinaigrette, you’ll forget you’re eating a salad!

Spinach Salad

ingredients:

Salad
1 bag baby spinach
1 tomato, chopped
⅓ cup cashews
⅓ cup feta cheese, cubed or crumbled

Vinaigrette
¼ cup extra virgin olive oil
3 tablespoons balsamic vinegar ¼ cup plum sauce
½ an orange, squeezed

directions:

1-      Place all salad ingredients in big bowl.

2-      In separate bowl, mix ingredients of vinaigrette.

3-      Pour over top of salad and toss.
